How to Cook White Bean Salad |
Ingredients White Bean Salad
For salads:
- 1 cup boiled white beans
- cup chopped tomatoes
- cup of chopped cucumber
- 2 green bell peppers, chopped
- chopped parsley cup
- cup chopped fresh dill
- cup chopped green onions
- 4 boiled eggs
Dressing:
- 2 tablespoons olive oil
- 1 teaspoon vinegar
- 1 tablespoon lemon juice
- teaspoon salt
- 1 teaspoon sumac
For a quick pickle of onions:
- 2 cups hot water
- 2 red onions, thinly sliced
- 1 tablespoon lemon juice
- 1 teaspoon vinegar
- 1 teaspoon salt
- 1 teaspoon sumac
How to Make White Bean Salad:
- In a large bowl, mix all the salad ingredients except the eggs.
- If you don't want to marinate the onions, cut them into thin strips and mix in the other ingredients. If you want to pickle the onions, pass them through the sauce and continue with the quick pickled onions below.
- Whisk everything for the sauce and pour over the salad. Stir until smooth and sprinkle with sliced or halved egg.
To make quick pickled onions:
- Throw the chopped onions into the hottest water, boil for a minute, and then switch to the coldest water to stop processing. Let them sit in cold water for a while and dry well.
- Mix the lemon juice, vinegar, salt, and sumac and pour this over the drained onions. It is ready to use in 5 to 10 minutes. The longer the wait, the more cheerful the colors.
- Add the shallots to the salad combination and toss until smooth. Leave a little onion on top.
- For salad into a bowl and sprinkle with red onion again.

Pickled onions are optional for this recipe. Make a quick dip or pickle onion and combine it with a salad.
