Ingredients:
- 900 gr double chicken breast fillet on the bone (2 double chicken breasts)
- 3 Onions
- 1 Bunch of Vegetable Soup
- 1 salt
- 1 bay leaf
- 10 black peppercorns
- 250 milliliters soy cream
- 200 g carrots
- 200 g small mushrooms
- 300 g peas (frozen)
- 1/2 Lemon
- pepper
- nutmeg
- Chervil like a wish (for decoration)
Steps to Cook German Fricassee Chicken Recipe:
- Clean the chicken thoroughly, dry it, and peel the skin. Boil chicken breast in 1.2 liters of water with a pinch of salt. Remove foam with a skimmer.
- Meanwhile, slice two onions without peeling them. Clean the soup vegetables, peel the carrots and celery and coarsely chop them all.
- Add the onions and greens, along with the bay leaf and peppercorns, to the chicken and cook over medium heat for 35 minutes.
- Remove chicken breast from the pan and set aside. Pass the stock through a sieve and collect.
- Measure out 750 ml of broth and bring to a boil with soy cream. Reduce to 550 ml in 15-20 minutes over high heat. Meanwhile, peel the carrots and slice them lengthwise, and cut them into 3-4 cm lengths.
- Clean, clean, dry, and cut the mushrooms in half.
- Remove the chicken from the bones and cut it into 2 cm dice. Add carrots and mushrooms to the reduced (reduced) broth in the saucepan and cook for 10 minutes over medium heat.
- Add peas and meat and cook for another 3 minutes. Squeeze the lemon and grate a little nutmeg. Season the chicken fricassee with salt, pepper, nutmeg, and lemon juice, and garnish with a little chervil if you like.
