Ingredients

For dough:

  • 1 kg all-purpose flour
  • salt to taste
  • 2 eggs (beat lightly)
  • 2 tablespoons dry active yeast
  • 2 1/2 cups milk
  • 150 g unsalted butter (melted)

To clean/roll:

  • 800 grams of dark brown sugar
  • 4-5 tablespoons cinnamon powder


How to make Zeeuwse

  1. Place all dry ingredients, including yeast, into the bowl of a stand mixer with the dough hook attached. Gently warm the milk in the microwave or in a saucepan on the stove until lukewarm, and melt the butter. Add this to the dry ingredients along with the lightly beaten eggs and mix on low speed for about 6 minutes.
  2. When ready, the dough will be slightly wet but will stick together and move away from the sides of the bowl. Stop the mixer and place the dough on a lightly floured table. Form into a ball and put the dough back into the greased bowl. Cover the bowl with glad wrap or a tea towel and place in a warm place for about an hour or so to rise (until it has doubled in size.)
  3. While waiting for the dough to rise, prepare the sugar and cinnamon mixture by weighing the ingredients and mixing them in a bowl.
  4. After the dough has doubled in size, deflate the dough then break the dough (it weighs about 60 grams) and roll it into a ball. Roll these balls through the sugar and cinnamon mixture and place them on a baking sheet lined with parchment paper.
  5. Note: don't place the dough on a floured worktop to do this – you want the dough to be sticky or it won't stick to the sugar mixture!
  6. Allow the ball to prove for about an hour.
  7. After they have risen, take each ball and roll it into a 10-15 cm string. Then roll it through some of the sugar mixtures you've sprinkled on the bench to get a good all-over coating.
  8. When coated, turn the ope up tie it in a coarse spiral/knot, and place it back on the baking sheet to prove for an hour or so (or until well puffed.)
  9. When almost ready to cook – preheat your oven to 220 degrees Celsius and bake your Zeeland Bolus on the middle rack for about 8 – 10 minutes. then serve while still warm.
