Ingredients
- 6 cloves of garlic, chopped
- 4 medium onions, chopped
- 2 Cups Coconut Milk
- 6 cups fish stock
- Oil 6 tbsp
- 1/2 Cup Cashews, Powder
- 1/2 Cup Plain Beans, Ground
- 12 ounces Dried Cod, grated
- 1 Cup Dried Shrimp, Ground
- 2 tsp grated ginger
- 2 Days Old French Bread
- 2 Cups of Dende Oil
- 1 pound Raw Shrimp, Peeled and Deveined
- Salt & Pepper to taste
How to make Vatapa
- Cut the bread into small pieces and place it in a large bowl.
- Pour coconut milk into the bread and soak until the bread is soft. When it is soft, mix it in a food processor. Set aside.
- Heat the oil in a large saucepan. Add the garlic, onions, and whole prawns and sauté until the onions are translucent.
- Add ground cashews, ground peanuts, and ground shrimp and stir until all ingredients are mixed. Adjust taste with salt and pepper.
- Add the bread mixture and stir until combined.
- Add cod and fish stock. Continue cooking over low heat, stirring to prevent sticking, until the sauce is low and thick.
- Remove from heat, add grated ginger, and stir. Pour into a large bowl and serve with rice.
