Ingredients
- 6 cups cooked beans
- 10 tablespoons olive oil
- 2 tablespoons chopped onion
- 2 tablespoons salt with crushed garlic
- 6 cups cassava flowers (yucca) or cream of wheat
- 8 boiled or fried eggs
- 2 cups minced meat
- Linguica cut into 1 inch pieces
- 2 onions cut into rings
- 1 cup olives
- Coriander to taste
How to make Tropeiro Beans
- After draining the cooked beans, put the oil with the onion and salt mixture in a frying pan and heat it.
- When it's hot, add the chickpeas, mix well and add the cassava flowers or cream of wheat slowly while stirring. It must have a moist feel to it.
- Remove from heat and fry the linguica and add to the beans with the egg, onion rings, olives and cilantro.
- Serve with rice and salad.
