Dalgano - Thailand's Food Panang Gai or Panang curry is a Thai dish in the form of meat or shrimp with a light curry sauce. Panang curry sauce is usually made from red chili paste, coconut milk, and a bonus of basil leaves or kaffir lime leaves.

Ingredients:

  • 650 gr prawns
  • 75 g frozen peas
  • 6 lime leaves (finely sliced)
  • 2 tbsp cooking oil
  • 1 lemongrass stalk (take the white part, bruised)
  • 3 cm galangal (bruised)
  • 4 tsp coriander root (chopped)
  • 850 ml thick coconut milk
  • 2 tsp grated lemon zest
  • 2 tbsp fish sauce
  • 4 tsp brown sugar (crushed)
  • 2 tsp salt

Seasoning Ingredients:

  • 10 dried chilies (seeds removed)
  • 4 cloves garlic
  • 8 red onions
  • 2 tbsp ebi (soak in hot water)
  • 6 tsp pepper




How To make

  1. Heat cooking oil, saute galangal, lemongrass, coriander base, and other spices until fragrant.
  2. After that, pour the coconut milk, add the lemon zest, brown sugar, fish sauce, salt, add shrimp.
  3. Cook until thick and oily, add the peas and kaffir lime leaves.
  4. Test the taste, then remove and serve in a serving bowl.
