Texas Pecan Rice |
Ingredients:
- 2 broilers/fryers (3 to 4 pounds each), cut each into 8 pieces
- Salt and pepper
Barbecue sauce:
- 2 tablespoons canola oil
- 2 small onions, finely chopped
- 2 cups soy sauce
- 1/4 cup lemon juice
- 2 tablespoons brown sugar
- 2 tablespoons of water
- 1 teaspoon ground mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1/ 8 teaspoon salt
- 1/ 8 teaspoon chili sauce
cooking method:
- Sprinkle the chicken pieces with salt and pepper. Bake with skin side down, uncovered, on a greased grill rack over high heat for another 20 minutes.
- Meanwhile, in a small saucepan, make the barbecue sauce by heating the oil over the heat again. Add onions; fry until soft. Stir in remaining sauce ingredients and bring to a boil. Reduce heat, open for 10 minutes.
- Turn the chicken over; brush with barbecue sauce. Bake 15- 25 minutes longer, always basting with sauce, until thermometer shows 165°
