Ingredients

  • 900g large prawns, raw, peeled
  • 150 ml lime juice
  • 6 cloves of garlic, finely chopped
  • 6 tbsp coconut oil
  • 8 scallions, chopped
  • 2 onions, sliced half moon
  • 2 red bell peppers, thinly sliced
  • 2 tsp ground chili
  • 4 tsp paprika
  • 6 plum tomatoes, seeds removed and chopped
  • 800 ml coconut milk
  • 4 tbsp chopped coriander
  • white rice, to serve


How to make Shrimp Moqueca

  1. Place shrimp in a bowl containing 4 tablespoons lime juice, 2 tablespoons salt, and 2 tablespoons minced garlic. Refrigerate for 1 hour.
  2. Heat coconut oil in a large saucepan. Add green onions and onions, fry for 5 minutes, add red pepper, pepper, paprika, and remaining garlic.
  3. Enter the tomatoes, coconut milk and a little salt then simmer for 10 minutes. Add the prawns, all the spices, and the remaining lime juice. Simmer over low heat for about 3 minutes until the prawns turn white. Serve with fresh coriander and rice.
