Ingredients
- 900g large prawns, raw, peeled
- 150 ml lime juice
- 6 cloves of garlic, finely chopped
- 6 tbsp coconut oil
- 8 scallions, chopped
- 2 onions, sliced half moon
- 2 red bell peppers, thinly sliced
- 2 tsp ground chili
- 4 tsp paprika
- 6 plum tomatoes, seeds removed and chopped
- 800 ml coconut milk
- 4 tbsp chopped coriander
- white rice, to serve
How to make Shrimp Moqueca
- Place shrimp in a bowl containing 4 tablespoons lime juice, 2 tablespoons salt, and 2 tablespoons minced garlic. Refrigerate for 1 hour.
- Heat coconut oil in a large saucepan. Add green onions and onions, fry for 5 minutes, add red pepper, pepper, paprika, and remaining garlic.
