Ingredients:
- 450 g chicken thighs, cut into pieces
- 1 cup basil leaves (basil)
- 6 cloves garlic, chopped
- 2 red chilies, thinly sliced
- 1-inch ginger, thinly sliced
- 2 tbsp dark sesame oil*
- 1 tbsp Xiao Xing Wine
- 1 tbsp sweet soy sauce
- 1 tbsp soy sauce
- cup white part of the scallion, chopped
- Dark sesame oil is made from roasted sesame seeds. Compared to regular sesame oil, it is darker in color and has a stronger aroma. If not, you can replace it with regular sesame oil.
How to cook:
- Combine soy sauce, wine, and sweet soy sauce in a bowl. Set aside.
- Heat the sesame oil in a frying pan, then add the garlic, ginger slices, and red chilies. Saute until fragrant.
- Add chicken until brown.
- Pour the seasoning from number one, stir until evenly distributed.
- Reduce the heat and cover the pan. Leave for 30 minutes until the spices seep into the meat.
- Bring to a boil again, then add the basil and scallions. Cook for another 2 minutes.
- Serve with the rice still warm. Enjoy!
