Ingredients
- 2 pounds coarsely chopped boiled chicken
- 2 (8 ounce) cans whole corn, drained
- 2 cups pitted green olives, chopped
- 1 1/2 cups golden raisins
- 4 carrots, grated
- 2 celery stalks, finely chopped
- 1/2 green apple, finely chopped
- 8 tablespoons heavy cream
- 2 tablespoons Dijon mustard
- 2 pinches of white sugar
- salt to taste
- finely ground black pepper
- 4 tablespoons chopped fresh parsley, or to taste
Decoration:
- 4 large lettuce leaves
- 8 stalks of watercress
- 4 cups shoelace potato sticks
How to make Salpicão Salad
- Combine chicken, corn, olives, raisins, carrots, celery, and apples in a large bowl.
- Toss together the cream and mustard in a cup and season with sugar, salt, and pepper. Pour in the dressing then toss the salad to mix the dressing evenly then season with salt and pepper and sprinkle with parsley.
- Arrange the lettuce and watercress on a plate and a salad spoon in the middle. Sprinkle thin potato sticks on top and press into the salad. Refrigerate until served.
