Ingredients:
- 2 chicken thighs, skin removed
- salt as needed
- 1 tbsp vegetable oil
- 1 onion, chopped
- 3 cups chopped mushrooms
- 1 cup mayonnaise
- 2 cloves of garlic, crushed
- 3 hard-boiled eggs, yolks, and whites separated and grated
- 1 cup grated Cheddar cheese
- 1 (4.25 ounce) can pit black olives, drained
- 1 (8 ounces) bag of potato chips
Steps to Make Russian Sunflower Salad Recipe:
- Place the chicken feet in a large saucepan and cover with salted water; bring to a boil. Lower heat to medium-low and simmer until no longer pink on the bone, 15 to 20 minutes. Dry and let cool. Grate the chicken and season with salt.
- Heat the oil in a large skillet over medium heat. Cook and stir the onions until soft, about 5 minutes. Add mushrooms and cook until tender, 5 to 8 minutes.
- Mix mayonnaise and garlic together in a bowl. Mix 1/4 cup mayonnaise with chicken.
- Serve the disc-shaped chicken-mayonnaise combination on a serving plate. Cover with onion-mushroom combination and 1/4 cup mayonnaise. Add the grated egg white and 1/4 cup mayonnaise. Sprinkle Cheddar cheese on top; cover with remaining mayonnaise. Sprinkle the grated egg yolk evenly on top.
- Cut each olive into 4 sides and place it on top like sunflower seeds. Refrigerate the salad for 2 hours.
- Place potato chips around the salad to make it look like sunflower petals.
