Dalgano - Canada Food this is classic vegetarian Italian pasta. Fresh beans are best but this dish is easy to make with dried beans in winter. Many Italian families grow Romano beans, garlic, basil and tomatoes. To use fresh beans, peel and freeze without additional processing. To use fresh or frozen beans, cover them with water, bring to a boil and simmer until tender, about 10 minutes. Then continue with the recipe by adding salt, garlic, etc.

Ingredients:
- 2 cups (250 mL) dried Romano beans
- 5 cups (750 mL) water
- 2 tsp (5 mL) salt
- 4– 3 cloves of garlic, chopped
- 2 large branches, fresh basil
- 2 – 5 oz (156 mL) canned tomato paste
- 2 – 28 oz ( mL) cans of Roma tomatoes
- 4 tbsp (30 mL) olive oil
- 4 cups (500 mL) pasta, penne, fusilli or macaroni
- Olive oil, chopped, dried chilies, chopped fresh basil & grated Parmesan cheese, to taste
How To Make Pasta with Peanuts:
- If using dried beans, rinse well and soak in cold water overnight. The next day, transfer the beans and the marinade liquid to a small, heavy saucepan. Cover, bring to a boil and cook over low heat until soft and beans begin to absorb liquid, about 1 1/2 hours.
- Add salt, garlic and basil. Bring to a boil; reduce heat and cook, uncovered, for 10 to 15 minutes. Add tomato paste and equal amounts of water. Cut the Roma tomatoes and add with their juices to the beans. Stir in oil. Continue to cook until the sauce thickens.
- In a separate saucepan, cook pasta in boiling salted water until almost tender. Drain and serve immediately in a soup bowl with nuts on top. Let each restaurant add olive oil, crushed chilies, chopped fresh basil, and grated Parmesan, according to their taste.
