Ingredients
- 6 tablespoons of good olive oil
- 2 small French loaves or boules, cut into 1-inch cubes (6 cups)
- 2 teaspoons kosher salt
- 4 large ripe tomatoes, cut into 1-inch dice
- 2 greenhouse cucumbers, unpeeled, seeded and sliced 1/2 inch thick
- 2 red bell peppers, core removed and cut into 1 inch
- 2 yellow bell peppers, skewered and cut into 2.5 cm dice
- 1 red onion, then cut in half and thinly sliced
- 40 large basil leaves, coarsely chopped
- 6 tablespoons capers, drained
- For the vinaigrette:
- 2 teaspoons finely chopped garlic
- 1 teaspoon Dijon mustard
- 6 tablespoons of champagne vinegar
- 1 cup good olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
How to make Panzanella Salad
- Fill a large skillet with oil and heat it.
- Add bread and salt; cook over low to medium heat, stirring frequently, for 10 minutes, or until lightly browned. Add more oil as needed.
- Mix all ingredients in a vinaigrette.
- In a large bowl, add the tomatoes, cucumber, red bell pepper, yellow pepper, onion, basil, and capers. Add bread cubes and mix with vinaigrette.
- Season liberally with salt and pepper. Serve, or let the salad sit for about half an hour to allow the marinade to combine.
