Ingredients :
- 3 tbsp salt
- 1 carrot, thinly sliced lengthwise
- 6 cups of water
- 900 gr chicory, cut into medium squares.
- 6 spring onions, cut and thinly sliced
- 1/2 tsp fresh ginger, chopped
- 3 tbsp Korean fish/shrimp sauce. But don't use this ingredient if you want to make vegetarian kimchi.
- 1/4 cup finely ground dry Korean chili (or another fine chili)
- 1 cup Korean radish, coarsely chopped
- 1 tbsp sugar
How to make kimchi:
- Before making it, wash all the ingredients starting from mustard greens, carrots, and other vegetables to avoid germs.
- Dissolve salt in water in a clean container.
- Add the chicory to the brine, press, and cover the mustard greens for up to 12 hours. Then shut up.
- After 12 hours, dry the mustard greens and set aside the water. After that mix other ingredients such as carrots and radishes. Add a little salt.
- The next step, puree, and mix the kimchi seasoning such as ginger, fish sauce, chili powder.
- After the spices are finished, mix the spices in the kimchi evenly.
- Put the kimchi ingredients back into a large closed container, add a little salt water that has been set aside earlier.
- Once everything is in the container, seal it tightly, and let it sit for a day or so.
- This is according to taste for the level of acidity.
- When the acidity level is appropriate, kimchi can be enjoyed.
