Dalgano -  Recipes Japan  Kamameshi literally translates to "kettle rice" and is a traditional Japanese rice dish cooked in a cast-iron pot called kama. Kamameshi originally referred to rice eaten together from kama.

Ikameshi Ingredients:

  • 2 pieces of squid
  • Japanese rice to taste
  • 1 tsp sesame oil
  • 1 tsp sesame
  • 1 tsp soy sauce

Sauce Ingredients:

  • 300 ml Dashi kaldu broth
  • 1/2 tbsp vinegar
  • 3 tbsp sugar
  • 3 tbsp soy sauce



How to make kameshi:

  1. Put in a bowl: Japanese rice, 1 tbsp soy sauce, 1 tsp sesame and 1 tsp sesame oil. Stir well.
  2. Put the rice into the squid. Cover the base of the squid with a toothpick.
  3. Prepare the ikameshi sauce by adding dashi stock, sugar, soy sauce, and vinegar. Stir well until boiling.
  4. Put the squid into the sauce and let it sit for a few minutes until the spices are absorbed.
  5. Cut the squid into small pieces. Arrange on a plate and drizzle with the sauce.
