Ingredients

  • 500 gr dry black beans, soak overnight, then drain
  • 200g striped bacon, cut into pieces
  • 1 kg pork ribs
  • 6 chorizo ​​cooked sausages
  • 1 kg pork shoulder and cut into 5 cm dice
  • 6 onions, chopped
  • 8 cloves of garlic, finely chopped
  • pinch of cayenne pepper
  • olive oil, for cooking
  • 4 bay leaves
  • 4 tbsp white wine vinegar

For Serving

  • steamed rice, chopped parsley or coriander, chili sauce, and orange slices



How to make Feijoada

  1. Heat a large skillet with thick bottom and lid, add bacon and fry until crispy. Remove the foil and leave it in the pan. Slice the ribs, sausage, and pork shoulder bit by bit. Season each part using seasoning salt and pepper evenly.
  2. Remove the meat and set it aside. Place the onion, garlic, and cayenne pepper in a saucepan. If more is needed, add a little olive oil. Season with salt and pepper and fry for 8 minutes until tender.
  3. Add the meat, bay leaf, white wine vinegar, and drained nuts. Boil with about 650 ml of water. Bring to a boil and reduce heat. Cover and cook for 2 hours or until beans are tender and meat is tender. If there is too much liquid in the pan, remove the lid within the last hour. You can use a slow cooker for the short method (4 hours), or you can use a pressure cooker to make quick versions in batches every 30 minutes. Another way is to cook in the oven for 3-4 hours with convection/gas 3 at 160°C / 140°C.
  4. Serve with rice, a pinch of parsley or coriander, hot paprika sauce, and orange wedges.
