Ingredients:
- 100 grams of wheat flour
- 1/2 tsp baking powder
- 1 egg, lightly beaten
- 100 ml cold fish, vegetable, chicken, or dashi stock
- 1 small potato, peeled and grated
- 1/4 white cabbage, pointed or sweet, grated
- 1 scallion, finely sliced
- thumb-sized ginger, grated
- 1 tsp soy sauce
- 1 tsp mixture of sugar and water (substitute for mirin)
- 100 gr squid, shrimp, or octopus cook briefly
- Vegetable oil to taste, for frying

Sauce ingredients:
- 3 tablespoons soy sauce
- 1 tablespoon brown sauce
- 1 tablespoon English soy sauce
- 1/2 tablespoon soy sauce
- 1/2 teaspoon sugar and water mixture (substitute for mirin)
- 1/ tsp honey
Garnish:
- 1 tbsp mayonnaise
- Dry bonito flakes to taste
- Seaweed powder or togarashi seasoning to taste
- Sliced green onions as needed
How to make Okonomiyaki:
- Combine flour, baking powder, eggs, and stock. Mix well. Add the potatoes, season with a pinch of salt and white pepper, cover, and rest for at least two hours in the refrigerator.
- While the dough is resting, add the ingredients for the sauce, stirring until smooth. Set aside.
- Remove the dough from the refrigerator and add the cabbage, scallions, ginger, soybeans, sugar and water mixture, and seafood of choice. Stir to coat the mixture in the batter.
- Lightly heat the oil in a skillet over medium heat. Pour the batter into the pan, keeping the shape circular. Fry for 3-5 minutes. Use a palette knife to help you flip the okonomiyaki and cook for another three to five minutes. Test to see if the okonomiyaki is done by sticking a chopstick in the middle. If the chopsticks come out dry, the okonomiyaki is done.
- Turn over and serve okonomiyaki with sauce and garnish as desired.
