La Ji Zi means dry spicy chicken and is in the form of chicken meat that is diced and fried dry. During frying, dry Sichuan chilies, spicy bean paste, Sichuan peppers, garlic, and ginger are added.

Ingredients:
- Use Ingredient A: chicken marinade
- Take 1 chicken cut into small pieces (I use the thighs and breasts)
- Use 1 tablespoon of Shaoxing cooking wine (can be replaced with mirin)

- Prepare 1 egg yolk
- Take 1 tablespoon cornstarch
- Prepare 1 tablespoon vegetable oil (I use canola)
- Prepare 1 tbsp soy sauce

- Prepare 1 clove of garlic

How to make Sechuan / Laziji Spicy Chicken:
- Chop the ginger, onion, and garlic, set aside
- Chicken marinade: clean the chicken, cut it into cubes, then pat dry with paper towels to prevent the chicken from getting too wet. Add salt and pepper.
- Enter the Shaoxing cooking wine or can be replaced with mirin, soy sauce, stir until smooth.
- Add the egg yolks, mix well, then add the cornstarch and vegetable oil.
- Stir until all ingredients are well mixed, set aside, put in the refrigerator.
- Prepare ingredients for frying. The chili here is because there is only dry chili, so I only use the chili, but it will be more spicy and delicious if you add more kinds of chili. Prepare Sichuan pepper, this is the most important ingredient because it makes the smell and tastes numb on the tongue. A handful of sesame oil, you can add a handful of fried peanuts or fried cashews, it's definitely better.
- Mix sesame oil into 1 tbsp vegetable oil set aside.
- For Sichuan pepper oil, simply heat the oil, then pour the hot oil over the Sichuan pepper, set aside.
- Frying chicken: heat the oil to 200°C, so it must be with hot oil, then add the marinated chicken. Enter briefly (About 1 to 2 minutes), then remove the chicken, and fry again in hot oil until the chicken is browned.
- Saute: heat the new oil, add the Sichuan pepper, saute for a while, then add the chili, ginger, onion, and garlic. Saute until fragrant and add chicken. Add salt, seasonings, sesame mixture oil, Sichuan pepper oil, stir-fry for a while then add sesame and if there are nuts, add fried peanuts too, then stir-fry until evenly distributed, turn off the heat, serve.
