Ingredients:
- 500 grams of claws, clean
- 1 L ice water
- oil for frying
Seasoning ingredient:
- 6 cloves of red onion, thinly sliced.
- 4 red chilies, sliced oblique.
- 3 cm ginger, cut into matchsticks.
- 3 pieces of jackfruit/flower of Lawang
- 3 tbsp soy sauce
- 3 tbsp oyster sauce
- 2 tbsp sesame oil
- 2 tbsp tomato sauce
- 2 tbsp sugar
- 3 tbsp dark tacos/taco (optional)
- 1 tsp dark pepper powder
- 700 ml of water
- Salt and powdered broth to taste
- 2 spring onions, sliced oblique
- 1 tbsp tapioca flour, dissolved in a little water
- Oil for frying
Accessories Material:
- Sesame for sprinkling
Method of making:
- Heat the oil for frying the claws. Make sure the claws are submerged in the oil.
- Fry the claws for 10 minutes on fire again. Don't forget to close the frying pan because the claws will explode a little.
- Drain the fried claws, put them in ice water. Allow the claws to expand.
- Heat the oil, saute the shallots and red chilies until fragrant. Pour in the water and add the claws.
- Add spices and taste correction. When it is suitable, cook the claws for about 1 hour on fire again until the claws are soft and the spices absorb. Leave some water.
- Finally, add the scallions and tapioca solution.
- Stir until thickened.
- Remove and serve warm with a sprinkling of sesame.
