Ingredients:

Broth:

  • 4 tbsp olive oil
  • 400 g onion, halved, thinly sliced
  • 4 stalks celery, coarsely chopped
  • 6 pieces bay leaf1)
  • 2 tbsp dry thyme2)
  • 2 tsp dried basil
  • 2 tbsp black pepper powder
  • 1000 g beef ribs
  • 2 sprigs of parsley
  • 4.4 L water
  • 400 g whole smoked beef, diced 2 cm

Sup:

  • 4 tbsp olive oil
  • 300 g onion, halved, thinly sliced
  • 800g lentils3)
  • 2 tbsp salt
  • 2 tsp sugar
  • 2 tsp black pepper powder

Sprinkled:

  • 2 stalks celery, coarsely chopped

How To Make Canada Pea Soup:

  1. Broth: In a saucepan, heat the oil over medium heat. Sauté the onions, celery, bay leaf, thyme, and basil, until the onions are wilted. Add black pepper, mix well.
  2. Add the ribs and parsley. Pour water, cover the pot. Cook until boiling and oily (± 2½ hours). Remove, strain the broth as much as 2 L.
  3. Soup: In a saucepan, heat olive oil over medium heat. Saute onions until wilted. Add lentils, mix well. Turn down the fire.
  4. Pour in the stock that has been set aside. Season with salt, sugar and pepper, mix well. Cook, stirring, until the lentils are soft. Lift.
  5. When it's not hot, put the soup in a blender. Process until smooth. If it is too thick, add 500 ml of water.
  6. Reheat the lentil soup. Remove, spoon into each serving bowl. Sprinkle with the smoked beef. Sprinkle parsley. Serve hot.
