Ingredients:
- 1 cupcake and cake flour
- 1 cup sugar
- 8 large egg whites, room temperature
- teaspoon cream of tartar
- teaspoon salt
- cup powdered sugar sifted
- teaspoon vanilla extract

Steps to Process Angel Food Cake:
- Preheat the oven to 325ºF (160ºC).
- Sift flour and sugar about 2x, set aside.
- Beat the egg whites with the cream of tartar and salt until foamy, then add the icing sugar little by little, beating until the egg whites are high enough when the whisk is removed. Stir in vanilla.
- Add flour to beaten whites in 2 additions and use a whisk to add flour evenly and easily. Roll out the dough into a 10-inch, greased baking sheet, flatten evenly and bake the cake for 30-35 minutes until the dough returns when gently pressed (try not to open the oven before 25 minutes).
- Invert the cake pan to cool the cake, and do not remove the cake from the pan until it is completely cool. To remove, move a palette knife carefully around the outside of the cake, and very gently around the inner tube, invert the pan and tap it on the table until it pops out.
- Serve the cake with whipped cream and serve, if you wish.
- The cake will be set, well-bundled (not refrigerated) for up to three days.
