South Korean Kimchi


Ingredients:

  • 5 tbsp coarse salt
  • 500 gr chicory, cut into 4, cut into pieces
  • 1 liter of water

Vegetable Ingredients:

40 gr radish, cut into matchsticks
20 gr carrots, cut into matchsticks
40 g spring onions, cut into 3 cm

Ground spices:

  • 3 cloves of garlic
  • 1 cm ginger
  • 2 tbsp fish sauce
  • 1 apple, peeled, seeds removed
  • 1/2 an onion
  • 12 red chilies

Rice porridge:

  • 2 tbsp rice flour
  • 100 ml water
  • 1 tbsp sugar







How to cook:

  1. Soak the mustard greens with water and coarse salt, let stand for 30-60 minutes. Squeeze occasionally.
  2. To make rice porridge, mix rice flour, water, and sugar, mix well. Cook until thick. Set aside.
  3. Wash the mustard greens 2-3 times until the saltiness disappears. Squeeze and drain. Add mustard greens, accessory vegetables, ground spices, and rice porridge. Stir well.
  4. Put the kimchi into the jar. Store for 2-3 days at room temperature. After 2-3 days, kimchi is ready to eat.
  5. Prepare with practical noodles or rice.
