Ingredients
- 4 x 300 g kangaroo loin fillet
- 12 small beets, stems and roots removed
- 2 sweet potatoes, peeled, 2 cm cubes
- 120 grams rocket
- 200 grams of feta
- olive oil
- Sea salt
- Freshly ground black pepper
Marinate
- 4 tablespoons olive oil
- lemon, juiced
- 4 cloves of garlic, crushed
- 2 teaspoons dry thyme
Coating
- 4 tablespoons olive oil
- 4 tablespoons red wine vinegar
- 2 teaspoons whole grain mustard
- 2 teaspoons caster sugar
How to make Marinated Kangaroo Fillet
- Marinating kangaroo fillets gives it extra flavor, but it also helps tenderize the meat. Kangaroo is best enjoyed moderately.
- For marinating kangaroo fillet; In a small bowl, combine olive oil, lemon juice, garlic, thyme, season with salt and pepper. Add the kangaroo fillet and refrigerate for 2 hours or overnight.
- To make a salad of grilled vegetables; prepare the grill for indirect cooking over medium heat (190°C to 230°C). If you're using a Weber Q barbecue, prepare your barbecue with a convection tray and trivet.
- Put the sweet potato cubes in a bowl then sprinkle with olive oil and season with salt and pepper. Wash the beets thoroughly, tightly wrapping each beet in aluminum foil. Bake the wrapped sweet potatoes and beets over medium-low heat for 30 to 40 minutes.
- To make salad dressing; In a small bowl, combine olive oil, red wine vinegar, whole grain mustard, caster sugar, and season with salt and pepper to taste. Set aside until needed.
- Once the sweet potatoes and beets are cooked, remove from the grill. Let the vegetables cool enough to handle. When the beets have cooled enough, peel them and cut them into quarters. Save it until you need it.
- Prepare the grill for direct grilling over high heat (230°C to 290°C).
- Clean cooking grill brush. Bake the kangaroo fillets over high heat directly for 4 minutes on each side, or until cooked through and caramelized. If additional cooking time is required, move the kangaroo fillet to the indirect zone to finish cooking to your liking.
- Once the kangaroo is cooked, let it rest for 5 minutes before slicing.
- To finish the salad; Stir in sweet potato, beetroot, and rocket. Top with crumbled feta and top with whole grain mustard sauce. Finish with thin slices of kangaroo fillet.
