Ingredients:

  • 2 eggs
  • 80 gr sugar
  • 1 tablespoon honey
  • 130 gr flour
  • 1/2 teaspoon baking soda
  • 50 milliliters of water



Steps to Make Dorayaki:

  1. Beat the eggs, sugar, honey, with a whisk until it is quite fluffy/pale (I use a mixer, it doesn't need to be long until it's thick like making a cake. What needs to be thicker).
  2. Add flour and baking soda. Stir with a whisk, as needed. It's pretty rough. It will be smooth after the water enters.
  3. Add water. stir again with a whisk. leave 10 minutes. stir back.
  4. Pour with a ladle into a heated Teflon flat pan. If you already have pores, the edges are starting to dry but the center is still quite wet, flip it over. Bake for a while, remove. More or less the result of the lower side after being lifted like this. Watch, the edges are like honey, sticky. It will be "glue" after filling.
  5. Fill it with your favorite filling (I use red bean paste. Bought it ready at a pastry shop).
  6. And .. press the edges to cup.
