Ingredients:
- 6 jalapenos, finely chopped
- cup parsley, finely chopped
- 4 tbsp capers, rinsed, drained, and finely chopped
- 2 cups mayonnaise
- 2 tbsp mustard
- 4 skinless Australian barramundi fillets
- 4 toddler hearts cos, halved
- 4 tbsp olive oil
- tsp lemon peel
- Salt and pepper for seasoning
- 2 extra lemons cut in half
- 8 soft whole wheat bread
Making Method:
- Mix the jalapeno, parsley, capers, mayonnaise, and mustard in a bowl. Cover and leave in the refrigerator until cold
- Bringing the barbecue to medium-high heat
- Drizzle barramundi and cos liver with olive oil, sprinkle with lemon zest, and season with salt and pepper to taste
- Bake barramundi, turning once until browned and cooked through, approx. 3-4 minutes on each side, and rest for a while. Toast the lettuce and lemon with the cut side facing down until charred, approx. 1-2 minutes
- To serve, toast the sides of the loaf a moment before generously spreading the base with the jalapeno tartare. Sprinkle with barramundi, lettuce liver, and season to taste. Add bun tops and serve with charred lemon
