Lamington is a square-shaped sponge cake covered in chocolate sauce and rolled over grated coconut until the coconut covers the entire surface of the cake.

Ingredients:
- 120 g unsalted butter, melted
- 120 g sugar
- 3 eggs
- 1 vanilla bean, cut lengthwise, scrape the seeds
- 200 dry grated coconut, ready to use
- Dry ingredients sieve together:
- 237 g medium protein flour
- 1 tsp baking powder
- tsp salt
Cook together until the chocolate melts:
- 230 g dark cooking chocolate, chopped
- 120 ml heavy cream*)
How to make:
- Beat butter and sugar using a mixer on high speed until fluffy and pale.
- Gradually add the eggs, folding them in using a spatula.
- Add vanilla and dry ingredients. Fold again until smooth.
- Pour into a 5x5x5 cm tin that has been smeared with margarine, lined with parchment paper, and smeared again with margarine. Flatten.
- Bake in a hot oven at 180º C until cooked (± 60 minutes). Leave it at room temperature so that the hot steam dissipates. Cut into 5x5 cm pieces.
- Dip into the chocolate mixture. Roll in grated coconut until evenly coated. Do the same steps for all the cake pieces. Serve.
