Sumedang Tofu West Java Culinary
Dalgano - Everyone must know the name Sumedang Tofu. This typical West Java food has indeed been known and popular in all circles. Sumedang tofu which has a brown color and is hollow on the inside is very delicious if enjoyed while warm. The taste is delicious and savory plus the chili sauce or small cayenne pepper that accompanies it further adds to the delicacy.

Ingredients:
- 20 pieces of white tofu
- 2 chicken eggs
- 160 gr wheat flour
- 1/2 teaspoon baking powder
- 6 cloves of red onion, finely ground
- 6 cloves of garlic, finely ground
- 4 cm turmeric, finely ground
- 2 tbsp flavoring
- 2 tsp fine salt
- the right amount of oil
- enough clean water for soaking
How to Make Sumedang Tofu so Crispy and Delicious:
- Pour the flour into the prepared dough and then add it with fine salt, flavoring, and baking powder. Stir evenly.
- Puree the onion, garlic, and turmeric then look in a new container and flush with enough air. Stir evenly.
- Divide the white tofu into four, cut or according to taste then place in a container that already contains seasoning water. Drizzle the white tofu pieces and let them soak in the pieces. Drain.
- Crack the eggs place them in a new bowl and beat.
- Take the white tofu pieces that have been mixed with the spices dip them in the beaten egg and then add them to the flour mixture that is made to cover. this step until all the pieces of tofu are coated with egg and seasoning flour.
- Heat oil in a frying pan and fry the tofu that has been wrapped in egg and seasoned flour until it is crispy and has a crunchy texture. When ripe, the color will look a little dark. Lift and drain.
- Enjoy Sumedang Tofu while warm with dipping chili sauce, mayonnaise, and or spicy soy sauce.
