Ingredients:
- 1000 grams of beef
- 4 liters of water
- 6 cm galangal, bruised
- 4 lemongrass stalks, bruised
- 6 grains of cardamom
- 10 cloves
- 4 star anise / deaf
- 10 lime leaves
- 6 teaspoons salt
- 1 teaspoon sugar
- 2 teaspoons pepper powder
- 2 teaspoons curry powder
- 4 spring onions, sliced
- 6 tablespoons oil, for frying
Fine Material:
- 24 red onions.
- 14 cloves of garlic.
- 6 cm ginger.
- 2 cm of turmeric.
Complementary:
- Potato fritters.

How to make:
- Boil the meat with galangal and salt until soft, then remove and drain the meat and strain the broth.
- Heat oil, saute ground spices until fragrant and cooked. Then add lemongrass, lime leaves, cardamom, cloves, and star anise.
- Pour the remaining broth along with the meat, add salt, sugar, curry powder, and pepper. Bring to a boil over low heat. Taste test until it matches your taste, then add the scallions.
