Recipes Gota Chicken North Sumatra
Dalgano Recipes - Gota chicken is a typical food from Batak, North Sumatra. The name Gota itself is taken from the word blood, this food is mixed using the blood of the chicken itself and processed in different ways. In the manufacturing process, this food is added with blood from processed chicken. if you want to make it, I recommend using the blood from the free-range chicken because it has a pretty good taste. but for those of you who don't like blood, this dish is still delicious even though it doesn't use gota (blood) in the process. before cooking gota chicken, you must be proficient in cutting the chicken because you have to take the blood yourself. What are you waiting for, make and enjoy this recipe?Gota Chicken |
- 2 kg of free-range chicken
- The blood of 2 chickens is mixed with:
- – 2 teaspoons of salt
- – 2 limes
- Roasted ground spices:
- 4 lemongrass, cut into small pieces
- 10 cm Galangal cut into small pieces
- 14 cm ginger cut into small pieces
- 10 cm turmeric
- 10 cloves of garlic
- 20 cloves of red onion
- 20 pecan seeds
- 30 pieces of cayenne pepper or to taste
- Unroasted ground spices:
- 4 handfuls of andaliman or according to taste
- salt to taste
how to make Gota chicken:
- First, cut the free-range chicken and separate the fresh blood. Mix chicken blood with 1 tsp salt and lime juice. The goal is that the blood does not clot.
- Clean the chicken until clean of feathers then cut into small pieces. We used to roast this chicken on coals. But for a simpler way, you can bake it in non-stick Teflon.

- Grill the chicken until it is cooked through to the inside. Usually, the chicken will change from a fresh red color to brown. Wait until it is fully cooked.
- Peel all the spices and roast them according to the ingredients I have written above except chili and andaliman. The recipe is almost similar to the Natinombur Recipe, a Delicious Batak Grilled Fish Seasoning. Roasted spices will create a very fragrant aroma of all the spices.
- Grind all the roasted and unroasted spices. You can use a pestle or blender. I prefer less subtle spices.
- Saute all the spices that have been mashed until fragrant. Then add the previously separated chicken blood. Add a little salt to taste.
- When the color of the spices is brown, add the roasted chicken to the spices. Stir until evenly distributed. For those who don't like gota, just mix the chicken with the spices. And for those who don't like too many members, it can be just a few. Stir until the spices are completely absorbed into the chicken meat. Check the taste again.
- then, serve it hot so that the taste of the gota chicken feels very good.
